Delicious Italian Veggie Pasta Salad

I made a fantastic pasta salad with spinach and Italian dressing a couple years ago - it was a huge batch, large enough for a family party (leftovers for days) - and I've been wanting to make it again, but couldn't find the recipe. I decided I've waited long enough and cobbled together a recipe that is comes close and makes my mouth water just reading it. Just in time for summer! Two weeks into the new year, I've made progress on my goals, some more than others! Digestive issues slowed me down for most of it, but I am addressing possible causes by sticking as much as possible to a vegetarian, low-fat diet, and I visited my doctor to have some tests run. My last bout of symptoms occurred on Sunday, but I have been issue-free (at least regarding my gastrointestinal tract!) ever since. Today, I'm feeling great and am grateful!

The First Blank Page

I spent the last few days of the year literally sick to my stomach, the kind of illness that resulted in a ten pound weight loss and produced this gem of a text: "I'm gonna ring in the new year sitting on my frickin throne..." It was a fitting end to a year in which I forced change onto my life, as if it was the final purging of all the old toxic stress I had allowed to fester in me.

I've been reading up on feminism and sharing articles with a male family member who thinks that feminism is not relevant to his life, in order to be able to reach across barriers and communicate why these issues are so important to me. I found this graphic quoting bell hooks and it resonated so much that I wanted to keep it around somehow and thought my blog would be a good place to "pin" it.

Mujerista 3.0!

After two years of dragging my feet, I was finally inspired to fully embrace and invest time and energy into the development of my Mujerista persona and virtual space. I spent some time after work creating my logo (a modified version of the Burn Me Blue homage to Frida Kahlo I created a few years back), using the Pixlr.com photo editing site, and then I uploaded my logo to Facebook and finally went live with the page I first created two years ago, but hadn't published.

Regrets

I thought I had a few, especially given my penchant for nostalgia and self-doubt. Though these qualities have waned in recent years (it's hard to be nostalgic when you're trying to keep up with a toddler!), I'm not sure if anyone with my personality can ever quite give up the self-doubt bit...I think it comes packaged with the ambition and dreams that motivate us. However, I never quite felt regret as deeply as I have in recent days, when the loss of an old friend hit me belatedly and really had me in the throes of despair for a few days.

Countdown

Having recently unlocked my blog after a rogue module went haywire, keeping me out until I had time to deal with it, and this also being the winter solstice and first day of the year-long countdown to the fabled "end of the world" according to the Mayan calendar, I'm taking this opportunity to begin a countdown of my own, one that is more in line with the actual meaning of 12/21/2012 date - a transition from one era to the next.

Fresh & Easy: Addicted, but Conflicted

not so fresh and easyWhen we moved into our new place, we were excited to be within walking distance of some key locations - parks, schools, grandparents' house, just to name a few. Since we're actively trying to reduce our energy usage for both cost-saving and environmental reasons, this was a boon. We noticed the new shopping plaza around the corner had a Fresh & Easy market and walked there several times to check it out.
